Bees store honey in their hive by depositing nectar into hexagonal beeswax formations called cells with a wax capping.

To harvest honeycomb we cut a section of this comb and package it for culinary use, just as it was harvested from the hive. Cutting or biting into honeycomb releases the flavour of each individual cell of honey for the first time since the bees stored it.

Beeswax is edible, so the honeycomb, wax and all can be chewed and swallowed.

Honeycomb is a delicious treat alone, or in any pairing combination and often used in charcuterie boards and cheese platters. Our favourite way to consume is with an aged cheddar cheese!

As a result of being harvested and packaged directly from the hive, honeycomb sections may contain pollen and propolis- both are consumable hive products that enhance the flavour of the honeycomb.
